Vikings Ate Their Veggies!

Turns out mom was right. You need to eat your veggies if you want to be big and strong! Vikings ate kale, and lots of it. Vikings grew large quantities of kale, so recipe after recipe featured it.

…The Mediterranean Diet is similar to the Viking way!

Viking  Seasons

In the spring, Vikings ate pickled or dried vegetables with their dried or smoked meat. Late spring greens ensured fresh food in their diet. Summer would’ve featured lots of dairy from cows, sheep, and goats. When harvest came, food overflowed during late summer/early fall, and herds would be chosen for winter. Food supplies were also regional through trading, so it helped spread the culinary wealth.

Vikings Come Full Circle

The old way of doing things survives the test of time, from the seasonal eating trend to the current craze for bone broth. A perfect example: Some Bronze Age Scandinavian digs reveal animal bones with drilled holes in them. These bones have shown signs of having been boiled (to make bone broth). Nutrient-rich marrow was released during the slow cooking process.
