Colomba di Pasqua
Colomba di Pasqua is an Italian Easter cake, akin to the nation’s well-known Christmas desserts panettone and pandoro. Unlike the panettone, the colomba is stuffed with candied peel rather than raisins. It is then molded into a dove shape, to match its name — “colomba” in Italian means dove. Finally, it is topped with pearl sugar and almonds and baked.
