Watermelon Rind
This food scrap may REALLY surprise you! It may not sound as appealing as the red fruit it’s attached to, but that doesn’t mean you can’t eat the rind!
Watermelon rind almost always gets thrown in the trash, which means a lot of food waste after you’ve consumed the sweet red inside has been consumed.
But you should try pickling your leftover watermelon rind in some sugar, apple cider vinegar, and spices like cinnamon, cloves, peppercorns, and ginger. It makes for a great, crunchy snack or garnish.
But why bother?!? Here’s your reason to go crazy on those rinds: Watermelon rinds possess immunity-boosting vitamin C and many other nutrients.
