Copycat Recipe: Cracker Barrel Pancakes
Ingredients:
- 1 cup all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 egg2 tbsp butter, melted
- butter for the griddle
- Pure maple syrup
Directions:
- Mix your flour, the baking soda, baking powder, and salt in a large bowl. We recommend using an electric mixer if you have one.
- Whisk an egg in a smaller bowl. Add in the buttermilk and melted butter.
- Mix in the buttermilk egg mixture with the dry ingredients until the batter becomes smooth.
- Slide a stick of butter over a warmed skillet (or a large, flat frying pan.)
- Just make sure it doesn’t get too hot! This will scorch the pancakes…and your hands.
- If you’d like bigger pancakes like the ones at Cracker Barrel’s, pour a half cup of batter for each pancake.
- For small pancakes, pour on a quarter cup of batter for each pancake.
- Serve these yummy “copycat recipe” pancakes with some Cracker Barrel maple syrup and butter.
