Registered dietitian Rachael Hartley says summer vegetables like zucchini, simply seasoned with olive oil, garlic, salt, and pepper, are delicious on the grill. “I like to make extra and use leftovers for pasta, salads, and sandwiches during the week,” says Hartley.
