Zucchini
Zucchini is one of the favorite vegetables of nutritionists because of their low carbohydrate content and a very low glycemic index. Due to the high percentage of water, zucchini is low in carbohydrates and sugar, but rich in many essential nutrients such as potassium, manganese and antioxidants such as vitamin C and vitamin A.
An average zucchini contains more than 50% of the daily requirement of vitamin C. Foods that contain vitamin C can help maintain blood cell membranes, lower blood pressure and protect against inflammation and clogged arteries.
Zucchini has many B vitamins, including folic acid, vitamin B6 and riboflavin. Group B vitamins help maintain a healthy metabolism because they help metabolize proteins, carbohydrates and nucleic acids.
