Corn
Corn is one of the best known cereals, and at the same time it is rich in nutrients. Prepared and eaten in various forms, boiled, baked or in salads, corn can be a staple food in our menu.
Corn is especially important in your summer diet because it contains two antioxidants – lutein and zeaxanthin – which can act like natural sunglasses. Experts say that these antioxidants help form macular pigments, which filter out some of the sun’s harmful rays. These antioxidants also help reduce the risk of age-related macular degeneration, which is the leading cause of blindness in people over 60.
Corn is also a food that provides many B vitamins, such as vitamins B1, B3, B5, B6 and folic acid.
