She says they are “only pseudo-healthy.”
However, if you take closer look at what Dr. Halaas refers to as “pseudo” is actually healthier than what your regular breakfast. Why so? It turns out that the flour she uses to make her muffins is teff flour, a whole-grain flour that is gluten free and low on the glycemic index. Teff is also an immune system booster, so you should definitely try cooking with it more often.
