15. Squash
Squash is another super healthy vegetable you should definitely consume more often, especially if you have diabetes because it has a really low glycemic index. We recommend summer squash since it is easier to peel. Zucchini and Italian squash are the most common types out there; you can easily find them at your local grocery store.
Like the vast majority of vegetables, squash is abundant in antioxidants, too, which will most likely keep your blood sugar levels in check while improving insulin tolerance and decreasing levels of glucose. Squash is an excellent addition to any meal, so eat it whenever you can.
