Did someone say both hydrating and nutritious? He or she must refer to cauliflower! Around 100 grams of cauliflower has more than 60 ml of water, with only 3 grams of fiber.
Cauliflower is also known for its impressive nutrients: folate, manganese, magnesium, potassium, choline, phosphorus, as well as vitamin C, vitamin B6, and vitamin K.
This cruciferous veggie even contains an antioxidant called sulforaphane that may inhibit the growth of the enzymes involved in the development of cancer and tumor. What we would like to add is that choline, a crucial essential found in cauliflower, isn’t something you’ll find in many foods.
Wondering why is choline important? Well… it supports brain health, protecting it against many neurological disorders.
16. Cabbage

Another hydrating cruciferous veggie is, of course, cabbage. Being quite rich in vitamin K, vitamin C, folate, and many other minerals, cabbage consumption can ward off diseases and illnesses.
Its health-promoting effects may even get to the point of protecting us against certain types of cancers, particularly lung cancer due to the antioxidant called glucosinolate.
Furthermore, its vitamin C content can keep diabetes and heart disease at bay.
When it comes to ways to cook it, cabbage is most commonly used for sauerkraut or the Koreans most popular dish kimchi, but this doesn’t mean you can’t enjoy it as a salad or rolls.
