Thank you for answering the questions about how long past the expiration date something can safely be consumed. My husband has been in a nursing home almost a year and I have been eating out or with friends and not cooked much. Almost everything I have been pulling out of the cabinet lately expired before Christmas and I have thrown away many cans and packages. I am going to make a concerted effort to use up what I have before I buy any more. Thanks again.
As a retired food inspector with NYS, I assure you all that expiration dates are merely guidelines and not something etched in stone — NY State does not even issue violations for foods past their dates — the thinking is simple: if a food does not look or smell spoiled it likely is still safe to eat. That doesn’t mean it’s not stale or less than 100 % of its original quality. There are exceptions, of course — milk and poultry tend to spoil quickly — canned and sealed shelf-stable foods can last years — my suggestion is to take each product individually and form your own evaluations.
This is why spices were used. They masked the taste because we had no refrigeration to slow the spoiling. Meat is often “aged” to make it tender. what was once a tough and unchewable part is now ” prime cut” My Mother would take what was called a blade-cut roast and pressure cook it to make it tender. Served with plenty of boiled potatoes it was a hearty meal that would feed our family and others as well. we never knew who was going to sit at our table because they didn’t have enough food. Many will starve because they can’t make the food go far enough. people waste food by tossing out the leftovers. little if ever we tossed any food out. it was combined with something else making it go as far as possible. She used every spice possible to make it taste OK. Too many were going hungry every day. Everyone shared what they had. the expiration dates were created to cover their A55 for insurance. When I buy sourdough bread Istore itin the freezer then when the bread box get’s down, to 3 slice I get anothe bag of frozen bread put down a dish towel an open the bag for it to thaw out the chldren would not eat the dounut holes if they were not frozen Dad

Many of the throw away foods are ok if stored in freezer
Most of it I New, except the strawberry and spinach.
what about cake mixes?
Can you safely eat the bread if the mold is cut off? Assuming that the mold is not excessive.
Bread will stay fresher if you store it in the freezer not the refrigerator.
You left out rice
You know, you list the organisms that can be harmful on past date items, really?! Those organisms are harmful anytime! So don’t kid yourself! Contamination is an horrific concern these days. Perhaps that is one reason we are better off with locally sourced produce, meat, etc. Even that is not a guarantee. In the end, if you can cook it, you probably should, to the right temperature and time. The other issues relate to your handling of the product, and whether you cross contaminate, such as using the same spoon, knife, or fork you used on the raw product that you are using on the prepared/cooked product. Same thing with cutting boards, plates, etc. The main thing with some organisms is whether the population has grown beyond your body’s ability to fight it. But, why take the chance? Organisms like Hepatitis, Do Not Take a Chance EVER! Happy eating!
